• Ingredients:
  • 8oz package of whole FunGuy white button mushrooms
  • 2 boneless skinless chicken breasts
  • 2 cups frozen brussel sprouts
  • 1 onion
  • 1 pound new potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon coarse salt
  • ½ teaspoon black pepper
  • 1 cup vegetable broth

Looking to sprout your culinary wings this year? The FunGuy has it covered with this recipe that requires minimal skills to pull off and produces a healthy and tasty one dish meal. All that’s needed is some cutting, a little tossing, and the ability to turn on the oven. 

The hardest part is the time it takes for it to cook!

DIRECTIONS:

  1. Preheat the oven to 375F. 
  2. Brush off any debris from the FunGuy mushrooms with a damp cloth and cut them in half. Cut the brussel sprouts in half. Trim the root end off of the onion and cut it in half before thinly slicing it. Scrub the potatoes under cool water then cut them in half. Put everything into a large bowl. 
  3. Lay the chicken breasts on a clean cutting board and cut them into 1 to 1 ½ inch cubes and add them to the bowl with the vegetables.
  4. Pour the olive oil over the mushroom and chicken and add the oregano, thyme, garlic powder, paprika, salt, and black pepper to the bowl and toss it well to coat everything in the herbs and spices. Transfer everything to a large oven safe casserole dish, pour in the vegetable broth, and cover with aluminium foil. 
  5. Put the dish into the oven and allow it to cook. After 20 minutes, pull the dish out and carefully remove the foil with an oven mitt. Put it back into the oven and allow it to cook another 10-15 minutes or until the potatoes are browned and tender and the chicken is cooked through. 
  6. Using oven mitts, remove the dish from the oven and let it cool 5 minutes before serving.
