• Ingredients:
  • 6 eggs
  • ¼ cup milk
  • ½ teaspoon salt, divided
  • ¼ teaspoon ground black pepper
  • 4 tablespoons butter, divided
  • 8oz package of sliced FunGuy white button mushrooms
  • 4 slices of raclette cheese, or good melting cheese
  • 4 croissants
  • 2 tomatoes, sliced
  • butter

Make breakfast more interesting than usual by turning those fluffy scrambled eggs and buttery croissants into a sandwich!  Then go ahead and make them fun by tossing in a handful of sliced FunGuy mushrooms, slices of fresh tomatoes, and melted cheese. 

Better yet? This takes less than half an hour and will satisfy the whole family too!

DIRECTIONS:

  1. Crack the eggs into a bowl and add the milk, half of the salt, and the black pepper to eggs and beat them with a fork until they are frothy and light yellow in color. Set aside. 
  2. Melt half of the butter in a saute pan over medium heat. Add the FunGuy mushrooms to the pan and saute them for 4-5 minutes or until browned. Season the mushrooms with the rest of the salt and transfer them to a bowl, covering them to keep warm while making the eggs. 
  3. Add the rest of the butter to the pan and allow it to melt. Turn the heat down to medium-low and pour the eggs into the pan. Allow the eggs to cook about a minute, or until the bottom of the eggs have started to set before pushing the eggs around the pan to start scrambling them. Allow the eggs to cook all the way through. Divide the eggs into 4 separate places in the pan and add a slice of cheese to each quarter. Cover the pan with a lid to let the cheese melt; about 2-3 minutes. Turn off the heat. 
  4. Cut the croissants into half and spread a bit of butter on each side before adding the mushrooms, eggs with cheese, more mushrooms and the tomato slices to each. 
  5. Serve immediately.
