• Ingredients:
  • 1 package of FunGuy shiitake mushrooms
  • 2 medium onions
  • 4 cloves garlic
  • 1 pound ground beef
  • 1 teaspoon coarse salt
  • 1 teaspoon paprika
  • ½ teaspoon ground ginger
  • ½ teaspoon ground allspice
  • ¼ cup chopped cilantro
  • 1 lime
  • 3 tablespoons olive oil
  • 2 medium tomatoes
  • 4-6 lettuce leaves, shredded
  • pickled sweet pepper slices
  • 4 tablespoons mayonnaise
  • 2 ½ tablespoon ketchup
  • 1 teaspoon Dijon mustard

Shiitake-up your weekly dinner routine with our new FunGuy shiitake burgers!

These juicy burgers are infused with an Asian inspired blend of umami flavors and layered with slices of tomato, onion, and crisp lettuce. However, what makes it fun is our sautéed shiitake mushrooms and sweet pickled peppers on top!

DIRECTIONS:

  1. Brush off any debris from the FunGuy shiitake mushrooms with a damp cloth. Trim the end of the stems, pop them out of the cap using your thumb and mince and transfer to a mixing bowl. Slice the mushroom caps and set aside. Peel the onions and garlic, dice one onion and mince the garlic cloves, and add them to the mixing bowl with the minced mushroom stems. Thinly slice the other onion and set it aside for topping. 
  2. Add the ground beef to the mixing bowl along with the salt, paprika, ginger, allspice, and chopped cilantro. Cut the lime in half and squeeze half of the juice in with the mushroom and meat. Mix everything together in the bowl with your fingers until well blended. Divide the meat into 4 balls and press each ball between a couple pieces of parchment paper to flatten them evenly. Shape the edges with your fingers to make the patties circular. Cover and refrigerate for at least 15 minutes.
  3. When ready to cook the burgers, heat half of the olive oil in a skillet over medium high. Add the burger patties to the hot skillet and allow them to cook 4-5 minutes on each side. Transfer the burgers to a plate, tent a piece of aluminum over them to keep warm while cooking the shiitake mushrooms. 
  4. Heat the rest of the olive oil in the pan, reduced the heat to medium. Add the shiitake mushrooms and sauté 3-4 minutes or until browned. Season with salt to taste and transfer to a bowl and cover. 
  5. Open the hamburger buns and place them, cut side down, on the hot pan to lightly toast for 1 minute.
  6. While the buns toast,  mix the mayonnaise, ketchup, and Dijon mustard together in a bowl. 
  7. To assemble, spread the sauce on the bun and layer lettuce, burger patty, tomato, onion slices, shiitake mushrooms, and top with the pickled peppers and the top half of the bun. Repeat with the rest of the burgers. 
  8. Serve immediately!
