• Ingredients:
  • Water
  • Salt
  • 8oz dry whole wheat orzo pasta
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 8oz package of sliced FunGuy white button mushrooms
  • 2 tablespoons butter
  • 1 tablespoon brown miso paste
  • salt
  • Flat leaf parsley, chopped (optional)

Not every meal can be an extravagant three hour long endeavor, and that’s why the FunGuy always has something simple and speedy ready to go, like this miso mushroom and orzo pasta! 

This recipe is done in less than 15 minutes and can easily be tailored to the days cravings. Have a hankering for roast chicken? No problem, this pasta is the perfect side! Want to up your intake of cruciferous vegetables? Chop up those collard greens or add a handful of broccoli florets and toss them right into the mix and you’re good to go!

DIRECTIONS:

  1. Bring a pot of water and the salt to a boil over high heat. Add the orzo to the pot and let it cook 6-8 minutes, or until tender. Drain the pasta of any excess water when done cooking. 
  2. While the pasta cooks, prepare the FunGuy mushrooms. 
  3. Heat the olive oil in a sauté pan over medium high heat. Add the onion and cook 1 minute. Add the garlic and cook another minute, then add the sliced mushrooms to the pan and sauté 3-4 minutes or until lightly browned.  
  4. Add the butter to the pan and let it melt. Next, stir in the miso paste and toss the mushrooms in it to coat them well. 
  5. When the pasta has finished draining, add it to the pan with the mushrooms and stir well to combine. Taste and season with salt as needed. 
  6.  Serve this mushroom and orzo pasta immediately with flat leaf parsley on top.
