• Ingredients:
  • 1 pound dry spaghetti
  • water
  • 4 tablespoons olive oil, divided
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 cup shredded red cabbage
  • ¼ cup shredded carrot
  • 8oz package of sliced FunGuy white button mushrooms
  • salt
  • black pepper
  • fresh flat leaf parsley (optional)

Much like this healthy mushroom and red cabbage spaghetti recipe, we suggest getting your cabbage on this week with a little sauté, a little twirl, and a sprinkled with the simplest of seasoning and a cooked in a light coating of olive oil. You can add your favorite protein like chicken, or a yolky egg on top!

DIRECTIONS:

  1. Bring a pot of water to a boil over high heat. Add in the dry spaghetti and allow to boil for about 8 minutes or until the pasta is cooked through.
  2. While the spaghetti cooks, prepare the rest of the ingredients.
  3. Heat half of the olive oil in a sauté pan over medium high heat. Add in the onion and cook 1 minute then add the garlic and allow it to cook 2 minutes or until lightly browned. Add the shredded cabbage and carrot and cook 6-7 minutes, stirring frequently, or until tender but still with a bit of crunch. Transfer the cabbage and carrot to a bowl and cover to keep warm. 
  4. Add the remaining olive oil to the pan. Add in the mushrooms and cook another 5 -7 minutes or until browned. Transfer the cabbage and carrots back to the mushrooms and stir. 
  5. Once the spaghetti has cooked through, drain it of excess water. Immediately add the pasta to the mushrooms and cabbage mixture while still wet. Stir the spaghetti in with the mushrooms and cabbage until well combined and the liquid in the pan coats the pasta. Taste and season the pasta with salt and black pepper as necessary.
  6. Serve immediately.
