• Ingredients:
  • water

  • 8oz dry spaghetti pasta
  • 8oz package of whole FunGuy white button mushrooms
  • 1 small onion
  • 3 cloves garlic
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • ¼ cup vodka
  • 3 tablespoons roasted red bell pepper paste
  • ¾ cup cream
  • flat leaf parsley
  • salt
  • black pepper

Spaghetti with a good tomato sauce is a dinner time classic, but with the FunGuy in charge there are so many other pasta-bilities!

In this pasta recipe we used sweet roasted red pepper paste as the base for this complex and creamy sauce and topped it with sautéed button mushroom caps. 

The addition of vodka in the ingredient list sounds sauce-spicious, we know, but no need to worry! The alcohol cooks off while the sauce simmers away only leaving a hint of flavor, and making it perfectly safe for the whole family.

DIRECTIONS:

  1. Bring a pot of water to a boil over high heat. Add in the dry spaghetti and allow to boil for about 8 minutes or until the pasta is cooked through.
  2. While the spaghetti cooks, prepare the rest of the ingredients.
  3. Brush off any debris from the FunGuy mushrooms with a damp cloth. Pop out the stem using your thumb and discard, leaving just the caps. Peel and finely chop the onion and mince the garlic cloves. 
  4. Melt the butter with the olive oil in a sauté pan over medium high heat. Add in the onion and cook 1 minute then add the garlic and allow it to cook 2 minutes or until lightly browned. Add in the mushrooms and cook, stirring occasionally, another 8-10 minutes or until browned. Pour the vodka into the pan and allow it to cook about 1 minute or until it has reduced slightly. Transfer the mushrooms to a bowl, sprinkle with a pinch of salt, and cover to keep warm. 
  5. Stir the red bell pepper paste into the vodka in the pan until smooth, stir in the cream, and reduce the heat to medium-low. Let the sauce cook 3-5 minutes longer, or until thick and creamy. Taste and season with salt and pepper as needed. 
  6. Once the spaghetti has cooked through, drain it of excess water. Divide the pasta between 4 plates and ladle the vodka sauce over the noodles and top with the mushrooms and fresh parsley. 
  7. Serve immediately.
