• Ingredients:
  • 10oz packages of FunGuy Mushroom Stuffers
  • 3 tablespoons olive oil, divided
  • ¼ teaspoon fine salt
  • 3 oz fontina cheese
  • 3 oz beef steak
  • 4 cloves garlic, minced
  • ½ teaspoon coarse salt
  • ¼ teaspoon dried rosemary
  • ¼ teaspoon dried oregano
  • ¼ teaspoon fresh ground black pepper
  • 1 tablespoon fresh chopped chives

These gooey melted fontina cheese filled FunGuy stuffers have been topped with slices of juicy well seasoned steak, making them the perfect meaty cheesy bite that must be included on every festive table all month long! 

DIRECTIONS:

Preheat oven to 375F. Line a baking sheet with parchment paper.

  1. Brush off any debris from the FunGuy mushrooms with a damp cloth. Pop out the stem using your thumb and discard and place the mushroom caps in a bowl. Drizzle half of the olive oil over the mushrooms and season them with the fine salt and toss well. Transfer the mushrooms to the baking sheet, hole side up. 
  2. Cut the fontina cheese into cubes just large enough to fill the mushrooms and fill each mushroom. Put the baking tray into the oven to bake for 10 minutes or until the cheese has melted and the mushrooms are tender and wrinkled a bit on the outside. While the mushrooms cook, prepare the steak
  3. Lay the steak on a clean cutting board and drizzle the remaining oil on each side. Season both sides with the coarse salt, rosemary, oregano, and black pepper and gently pat it into the meat. 
  4. Place a cast iron skillet on the stove over high heat and let it get hot. Once it’s hot lay the steak on the pan and let it cook 5-6 minutes for medium rare, turning it every minute. Cook longer for a more done steak. Once cooked, transfer the steak to a cutting board to rest while preparing the mushrooms.
  5. Once the mushrooms have cooked and the cheese has melted, take them out of oven. Slice the steak into very thin slices and place one or two on top of each mushroom. Serve immediately with a bit of the fresh chives on top.
