- Ingredients:
- 10oz packages of FunGuy Mushroom Stuffers
- 3 tablespoons dark soy sauce, divided
- 1½ tablespoons sesame oil, divided
- ½ teaspoon chili pepper flakes
- 2 cooked boneless skinless chicken breasts
- 1 lime, juiced
- 2 ½ tablespoons sweet chili sauce, divided
- 1 tablespoon honey
- 2 tablespoons sriracha sauce
- 4 tablespoons mayonnaise
- ½ cup cooked white rice
- 2 green onions, chopped
- sesame seeds
Spice up the holiday party with a bit of FunGuy fun and a plateful of our new sweet and spicy stuffers!
Sweet chili chopped chicken, a little bit of white rice, and our deliciously seasoned FunGuy stuffers will be a hit with anyone who likes a bit of heat with their appetizers, but just in case we’ve included a creamy, but still spicy, sweet sriracha chili mayo to make it worth the going back for seconds!
We suggest doubling or tripling this recipe for a large crowd because everyone deserves a bite!
DIRECTIONS:
- Preheat the oven to 375F and line a baking sheet with parchment paper.
- Brush off any debris from the FunGuy mushrooms with a damp cloth. Pop out the stem using your thumb and mince them on a cutting board. Transfer the mushroom caps to a bowl and add half of the soy sauce, 1 tablespoon of the sesame oil, and chili pepper flakes. Toss the mushrooms in the seasoning to make sure they are well coated. Lay the mushroom caps on the prepared baking tray hole side up.
- Lay the cooked chicken breast on a cutting board and roughly chop it into small pieces. Put the chicken into a bowl with the remaining soy sauce and sesame oil. Add half of the sweet chili sauce and honey to the chicken and mix well.
- Spoon a little of the white rice into the bottom of each mushroom and top with the seasoned chicken. Put the baking tray into the oven to bake for 10-15 minutes or until the mushrooms are tender and wrinkled a bit on the outside.
- While the mushrooms cook prepare the sriracha sweet chili mayo.
- In a bowl whisk together the sriracha, remaining sweet chili sauce, and mayonnaise. Taste and add a dash of soy sauce if necessary. Set aside.
- Remove the mushrooms from the oven and drizzle the sriracha sweet chili mayo on each and sprinkle sesame seeds and green onions on top.
- Serve immediately!
