• Ingredients:
  • 4 tablespoons olive oil
  • 8oz package of sliced FunGuy white button mushrooms
  • 1 small onion, thinly sliced
  • 2 garlic cloves, minced
  • 1/2 cup diced turkey breast
  • ¼ cup sauteed spinach or other leafy greens
  • 6 6-inch tortillas
  • 2/3 cup shredded white cheddar cheese
  • 1 ½ cups mashed potatoes

Fridge overflowing with juicy turkey, mounds of creamy mashed potatoes, and an array of other Thanksgiving side dishes? Then let the FunGuy help you put three of those items to good use with these Thanksgiving leftovers quesadillas!

This recipe uses sauteed mushrooms, turkey, and spinach that are then are folded into crunchy tortillas spread with creamy mashed potatoes and shredded cheese.  Everyone will enjoy this perfect alternative to the classic leftover sandwich!

DIRECTIONS:

  1. Heat the olive oil in a large saute pan over medium-high heat. Add the onions and garlic to the pan and saute for 2 minutes. Add the FunGuy mushrooms to the pan and saute for another 5-6 minutes. Increase the heat to high and add the turkey and spinach to the pan, sauteing 4-5 minutes or until the turkey has browned a bit. Turn off the heat and transfer everything to a bowl and wipe the pan clean. 
  2. Lay the tortillas out on a large cutting board and spread the mashed potatoes in a thin layer over the tortilla. Sprinkle a little cheese over one half of the tortilla/mashed potato before spreading the mushroom and turkey mixture over that same half, top with more cheese, and fold the tortilla in half. Repeat with the rest of the tortillas, filling, mashed potatoes, and cheese. 
  3. Heat 1/3 of the olive oil that is left in the saute pan over medium-high heat. Carefully lay two of the quesadillas in the pan and allow them to cook 2-3 minutes on each side. Transfer the cooked quesadillas to a plate. Repeat with the rest of the quesadillas. 
  4. Cut the quesadillas into thirds and served immediately.
