• Ingredients:
  • 1 medium onion, sliced
  • 2 garlic cloves, minced
  • 6 tablespoons olive oil
  • 8oz package of sliced FunGuy white button mushrooms
  • 1 cup cooked brown rice
  • 4 cups arugula
  • 3 tablespoons white wine vinegar
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon black pepper
  • salt
  • pine nuts (optional)

Simple, filling, and nutritious is the goal this January with a new FunGuy salad recipe! 

Toasted healthy brown rice, a whole lot of leafy arugula greens, and a whole lot of our sliced FunGuy mushrooms come together in this easy winter time salad. Finished off with a classic and easy herb vinaigrette and a peppering of crunchy pine nuts, and you’re good to go! 

This salad is the perfect base for steamed or grilled chicken, fish, or a hard boiled egg or two!

DIRECTIONS:

  1. Heat 2 tablespoons of the olive oil in a sauté pan over medium high heat. Add the onion and sauté one minute then add the garlic and sauté another minute. Add the FunGuy mushrooms to the pan and sauté 4-6 minutes or until browned around the edges.  Transfer the mushrooms and onion mixture to a bowl and cover to keep warm while preparing the rice. 
  2. Heat 2 more tablespoons of olive oil in the same pan. Add the rice to the pan and toss it in the oil to coat and then allow it to toast in the pan, stirring occasionally, 5-7 minutes, or until the rice has become fragrant and browned. Season the rice with a pinch of salt and transfer to a mixing bowl. 
  3. Add the arugula and mushroom mixture to the mixing bowl and toss well to combine. 
  4. In another bowl, whisk the remaining 2 tablespoons of olive oil, vinegar, oregano, basil, and black pepper. Taste and season with salt as necessary. Pour the vinaigrette over the salad and toss again. 
  5. Serve immediately with pine nuts on top.
