• Ingredients:
  • 8oz package of whole FunGuy white button mushrooms
  • 1 onion
  • 4 cloves garlic
  • 1 inch ginger root
  • 6oz broccolini
  • 8oz firm tofu
  • 1 tablespoon curry powder
  • 1½ teaspoon ground cumin
  • 1 teaspoon paprika
  • ½ teaspoon cayenne pepper
  • ¼ teaspoon ground turmeric
  • pinch of salt
  • 3 tablespoons ghee, or clarified butter
  • 1 cinnamon stick
  • 2 tablespoons vegetable oil
  • 14oz can diced tomatoes
  • 2/3 cup coconut milk
  • fresh cilantro
  • 1 lime, halved

Most have heard of chicken tikka masala, but what about an equally delicious vegetarian friendly version that makes our favorite FunGuy mushrooms the star instead?

Of course this recipe may have mushrooms starring, but the co-stars of the dish are a handful of  cubed tofu and a bunch of crunchy, yet tender, broccolini! Just serve with a bit of rice or a piece of naan bread and you’re good to go!

DIRECTIONS:

  1. Brush off any debris from the FunGuy mushrooms with a damp cloth, trim the stems and cut the mushrooms into quarters. Peel the onion, garlic, and ginger. Thinly slice the onion and mince the garlic and ginger. Wash the broccolini thoroughly and trim the ends. Cut the tofu into 1/4 – 1/2 inch cubes and transfer to a bowl. 
  2. In a small bowl, mix the curry powder, cumin, paprika, cayenne pepper, turmeric, and a pinch of salt together. Sprinkle ½ of the spice mixture over the tofu and toss to coat the cubes evenly. 
  3. Heat the ghee in a large sauté pan over medium heat. Add the onion and cook about 5 minutes, or until translucent. Add the garlic, ginger, and cinnamon stick and cook 1 minute. Add the broccolini to the pan and sauté for 3-4 minutes, or until just barely tender and a vibrant green. Transfer the broccolini to a bowl and set aside. Add the rest of the spice mixture to the pan and fry about 2 minutes, or until fragrant. 
  4. Pour the vegetable oil into the pan and stir before adding the mushrooms and tofu, allowing them to cook 4-5 minutes, stirring frequently. Stir in the diced tomatoes and coconut milk. Bring everything to a simmer and allow it to cook about 10 minutes. Add the broccolini back into the pan and cook another 5 minutes. Turn off the heat, taste and add salt if necessary 
  5. Serve immediately over rice with a squeeze of lime juice and fresh cilantro!
