• Ingredients:
  • 1 16 oz can black beans, rinsed
  • 4 cloves garlic, minced
  • 1 small onion, minced
  • 4 tablespoons olive oil, divided
  • Salt for seasoning
  • 2 limes, juiced
  • 8oz package of whole FunGuy white button mushrooms
  • 1 tablespoon taco seasoning
  • 4 tablespoons fresh cilantro
  • 8 small flour tortillas
  • ½ cup pico de gallo
  • ¼ cup guacamole

What do you get when you have a mushroom party on Cinco de Mayo? A FunGuy fiesta!

And what should one serve at a FunGuy fiesta? Specially made carnitas using the “meat” of the vegetable world; mushrooms. Not just any mushrooms though, but ones spiced with taco seasoning and lime juice wrapped in soft tortillas with black beans and topped by fresh pico de gallo and creamy smooth guacamole.

DIRECTIONS:

  1. Heat half of the oil in a skillet over medium heat. Add in the garlic and onion and cook 1 minute. Toss in the beans and cook another 3-5 minutes or until cooked through. Season the beans with a pinch of salt and half of the lime juice, stirring well. Cover and turn heat to low just to keep the beans warm while making the mushrooms.
  2. Clean the FunGuy mushrooms by brushing them with a damp cloth to remove any debris. Trim the ends and discard then cut each into quarters.
  3. Heat the other half of the olive oil in a sauté pan over medium high heat. Add in the mushrooms and stir in the taco seasoning. Cook the mushrooms for 3-4 minutes or until just starting to brown. Season the mushrooms with a pinch of salt and the other half of the lime juice and cook an additional 3-4 minutes. Remove from heat.
  4. Just before serving stir in 1 tablespoon of cilantro into the beans and 1 tablespoon into the mushrooms.
  5. Assemble the “carnitas” by layering the black beans on each tortilla, then the mushrooms, pico de gallo, guacamole, and the rest of the cilantro on top.
  6. Serve immediately!
