• Ingredients:
  • 10oz packages of FunGuy Mushroom Stuffers
  • 5-6 cherry tomatoes
  • 4-5 Greek olives
  • 2 garlic cloves
  • 1 tablespoon fresh oregano leaves
  • 1 tablespoon fresh flat leaf parsley
  • 3 tablespoons cream cheese
  • 1-2 tablespoons crumbled feta cheese
  • fresh ground black pepper

Thinking of making a Greek feast this weekend? While there are the usual pitas, Greek salad, and souvlaki why not leave some mushroom on that table for a quick FunGuy recipe too!

These stuffers are large bites of mushrooms stuffed with Greek flavors of tomato, olives, garlic, fresh herbs, and feta cheese that are sure to whet the appetite. 

DIRECTIONS:

  1. Preheat oven to 375F. Line a baking sheet with parchment paper.
  2. Brush off any debris from the FunGuy mushrooms with a damp cloth. Pop out the stem using your thumb and discard. Place the mushroom caps, hole side up, on the prepared baking sheet. 
  3. Dice the tomatoes, slice the olives, and mince the garlic cloves. Roughly chop the oregano and parsley. Transfer the tomatoes, olives, garlic, and herbs to a bowl and add the cream cheese and mix well. Spoon the cheese mixture into each mushroom cap and add a bit of the crumbled feta on top of each. 
  4. Bake the mushrooms in the oven for 12-15 minutes or until the feta has started to brown lightly and the mushrooms are cooked through. 
  5. Serve immediately.
