• INGREDIENTS:
  • ½ cup dried porcini mushrooms* (about ½ ounce)
  • 1 tablespoon olive oil
  • 2 cups chopped onions
  • 8 ounces FunGuy Mushrooms, brushed and sliced
  • 2 cloves garlic (more if you’re adventurous!)
  • ¼ teaspoon dried thyme
  • ¼ cup all-purpose flour
  • 4 cups chicken stock
  • ½ cup whipping cream or half-and-half
  • 1/3 cup Marsala wine (or Sherry, or Port, if you want your Italian grandma to roll over in her grave.)
  • salt and pepper

This delicious, delectable Italian-style FunGuy Mushroom soup recipe is so good, it’ll make your momma smack you with a loaf of bread. Hey! What’s a matter for you?

DIRECTIONS:

  1. Here’s a cool trick for re-hydrating dried mushrooms. Use a French Press coffee maker! Wash it real good, then put your dried mushrooms in, fill with boiling water until just covered. Pop that top on and press down gently until the top just sits on the mushrooms. They’ll absorb the liquid much better than rehydrating them in a bowl. Alternatively: do it in a bowl. Let stand for 15 minutes or until tender.
  2. While your porcini are taking a bath, heat the olive oil in a large saucepan over medium heat.
  3. Add onions and cook them until they’re translucent.
  4. Add the FunGuy mushrooms, garlic, and thyme. Cook for about 8 minutes, stirring gently and easily, maybe singing a tarantella.
  5. Add the flour, cook and stir about a minute until the flour is cooking. Stir in the stock.
  6. Drain your porcinis, reserving their bathwater. Chop them then add them to the saucepan with the reserved liquid.
  7. Bring it all just barely to a boil, then reduce the heat and simmer about ten minutes.
  8. Stir in the cream. Stir in the wine. Season with salt and pepper. Simmer it for five more minutes until it’s nice and hot.
  9. Serve right away in warm, thick bowls, with a huge chunk of Italian bread laid across the top.

* Traditional Italian Mushroom soup is usually made from Porcini mushrooms, which are so expensive, you can only buy them with gold plated Disney tickets and black caviar. If you can’t find dried porcini mushrooms, don’t worry. Just adjust the FunGuy Mushrooms up by about 1/3rd of a cup.
