• Ingredients:
  • 10oz packages of FunGuy Mushroom Stuffers
  • 8-10 pepperoni slices
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 large tomato, diced
  • ¼ teaspoon dried oregano
  • 3 tablespoons room temperature cream cheese
  • 2 tablespoons sliced green and black olives
  • 3 tablespoons shredded aged cheddar cheese

What to do when a pizza craving hits but you just need a taste? No need to pull out the delivery menu, just get into the kitchen and make some of the FunGuy’s Pepperoni and Olives Pizza Stuffers! 

These aren’t just a ball of cheese thrown into a mushroom cap and topped with the sliced deli meat, either. This has lightly caramelized onion, garlic, and tomato mixed into cream cream cheese, crispy pepperoni bits, olives, and some sharp cheddar cheese on top. 

It’s highly recommended that a double batch of these should be made, just in case that craving intensifies!

DIRECTIONS:

  1. Preheat oven to 375F. Line a baking sheet with parchment paper.
  2. Brush off any debris from the FunGuy mushrooms with a damp cloth. Pop out the stem using your thumb and discard. Place the mushroom caps, hole side up, on the prepared baking sheet and set the mushrooms aside.
  3. Heat a non-stick pan on the stove over medium heat. Lay the pepperoni slices in the pan in a single layer. Let the pepperoni cook 2-3 minutes before turning them over and cooking until crispy. Transfer the cooked pepperoni to a plate lined with paper towels. Dab off any excess oil and break the pepperoni into little chunks. 
  4. In the same pan, increase the heat to medium high, and heat the olive oil. Once the oil is hot add in the onion and garlic, sauteing them in the oil for 3-5 minutes, or until they are softened and starting to brown. Add the diced tomato and oregano to the pan and saute it with the onion and garlic until it becomes very soft and has just started to caramelize. Turn off the heat and transfer the tomato mixture to a blender or food processor and blend it until smooth. 
  5. Pour the tomato paste into a bowl and add the cream cheese, stirring well to combine. Spoon the tomato cream cheese mixture into each mushroom cap and top with the pepperoni, sliced olives, and a bit of shredded cheese. 
  6. Bake the mushrooms in the oven for approximately 15 minutes or until the cheese has browned a bit on top. Remove the stuffed mushrooms from the oven and let the mushrooms cool a minute or two before serving!
