Cinco de Mayo is right around the corner and you know FunGuy Mushrooms are always ready for a fiesta!

But you can’t have a fiesta without some delicioso finger foods like these mini empanadas stuffed full of melty Mexican cheese, spicy chile peppers and yummy mushrooms. So grab your favorite party sombrero and get cookin’.

DIRECTIONS:

  1. Sift flour and ½ teaspoon salt into a large bowl. Cut lard into 1 inch cubes and rub it into the flour with fingertips until it resembles a sandy texture.
  2. Add in 2-3 tablespoons of the ice water and mix together to make a firm dough. If it still is too dry, add the ice water a tablespoon at a time until the correct consistency is achieved.
  3. Lightly dust a surface with flour and knead dough on it until a ball forms. Wrap with plastic wrap and place in the refrigerator for 30 minutes.
  4. While the pastry is chilling, prepare the filling.
  5. Heat a sauté pan over medium high heat and add in the chorizo and poblano pepper. Sauté 2-3 minutes or until browned on the edges. Add bell pepper and onions to the pan and sauté 2-3 minutes or until onion is translucent. Put mushrooms in the pan and sauté an additional 4-5 minutes or until lightly browned. Season with salt and lemon juice.
  6. Transfer chorizo and mushroom mixture to a bowl and add cheese to the bowl and stir together.
  7. Preheat oven to 350F and line a baking sheet with parchment paper.
  8. Roll out pastry on a lightly floured surface. With a round cutter, cut out circles of dough.
  9. Place 1/2 tablespoon mushroom filling into the center of the circle. Dip your finger in water and run it around the edge of the pastry and fold it in half. Using the back of a fork, press the edges together to seal it.
  10. Place sealed empanada on the baking sheet. Repeat with the rest of the dough and filling. Beat egg lightly with a fork and brush on top of each empanada.
  11. Bake empandas for 25-30 minutes or until golden brown on top.
  12. Remove and allow to cool 5-10 minutes before serving.
