• Ingredients:
  • 8oz package of sliced FunGuy white button mushrooms
  • 1 tablespoon olive oil
  • 8 slices of bread
  • 4 tablespoons mayonnaise
  • 2 tomatoes, sliced
  • 8 slices of prosciutto
  • 4 slices of provolone cheese
  • 1 cucumber, sliced
  • Salt and pepper to taste

Why did the FunGuy sandwich cross the road? To prove he wasn’t chicken!

Kind of like this healthy FunGuy sandwich that has been filled with sautéed mushrooms, thin slices of prosciutto, juicy tomatoes, crisp cucumber and sharp provolone cheese. A perfect sandwich just in time for summer.

Chickens need not apply!

DIRECTIONS:

  1. Heat olive oil in a sauté pan over medium high heat. Toss the FunGuy mushrooms into the pan and sauté for 3-4 minutes or until just lightly browned. Remove the pan from heat and begin to assemble the sandwiches.
  2. Lay out the bread and spread ½ tablespoon on each slice. Next, layer one slice of prosciutto, cucumber, cheese, mushrooms, tomato slices, and one more slice of prosciutto. Top with another slice of bread and serve!
