• INGREDIENTS:
  • 8oz sliced FunGuy white button mushrooms
  • 1 ½ cup milk
  • 1 cup flour
  • pinch of salt
  • 1 egg, beaten
  • 4 tablespoons butter
  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon flour
  • ½ cup heavy cream
  • ½ cup beef broth
  • ¼ cup white wine
  • pinch coarse salt
  • ground pepper
  • Plain Greek yogurt
  • flat leaf parsley (optional)

What’s better than food on a stick? Food filled with… well, other food! You know, like turducken… But there’s no need to do any fowl stuffin’ to have a good meal around here.

Here’s a recipe for fresh homemade crepes, lightly browned in melted butter. Then we’ll take that warm crepe and wrap it around a rich, saucy, creamy filling of FunGuy mushrooms. It’s a dish that’s just refined enough to make for family or friends, but so tasty that the last thing you’ll want to do is share!

DIRECTIONS:

  1. Whisk the egg, milk, and salt together. Add flour and whisk together until smooth.
  2. Melt 1 tablespoon butter in a non-stick pan over medium-low heat.
  3. Ladle the crepe batter into the pan, tilting to roll the batter around to cover the bottom of the pan and spread it evenly. Allow crepes to cook 1 -1 ½ minutes or until the edges curl up and inward, flip the crepe with a spatula and cook the other side for an additional 30 seconds  to a minute.
  4. Repeat with the rest of the crepes, melting a tablespoon of butter in-between every other crepe.

When the crepes are done, start the best part…

The mushroom filling:

  1. In the same pan heat olive oil over medium high heat.
  2. Add in onions and garlic, sautéing until browned.
  3. Add sliced FunGuy mushrooms to the pan and sauté until browned around the edges.
  4. In a small bowl, whisk together tablespoon flour and cream until smooth.
  5. Pour white wine into the pan, stirring together with the mushrooms. Add vegetable broth and stir.
  6. Whisk in flour mixture and allow to cook until thickened. Season with salt and pepper.
  7. Lay a crepe out onto a plate and spoon mushroom filling into the middle and roll it up. Repeat with the rest of the crepes.

Serve with a dollop of tangy Greek yogurt and a sprinkle of fresh parsley on top, to cut the richness of these creamy crepes. This of course makes it all the more enticing to eat just one more. Who wants to just stop at one FunGuy crepe anyway??
