• Ingredients:
  • 8oz package of FunGuy crimini mushrooms
  • 2 bunches asparagus
  • 2 cloves garlic
  • 1 lemon
  • 1 tablespoon olive oil
  • 2-3 oz Raclette cheese
  • pinch of salt
  • fresh ground black pepper

Asparagus can be known to be an acquired taste for many, but this FunGuy recipe is sure to raclette your world! 

These spring asparagus spears and our fresh crimini mushrooms are simply seasoned with a little garlic, lemon, and a quick sprinkle of good old salt and pepper, but what makes them grate is a layer of melted raclette cheese.

DIRECTIONS:

  1. Preheat oven to 375F and prepare a baking dish or line a baking sheet with parchment paper. 
  2. Brush off any debris from the FunGuy mushrooms with a damp cloth. Trim the stems and slice the mushrooms. Rinse the asparagus under cool water, shake off, and trim and discard the tough ends.  Peel and mince the garlic. Zest the lemon and squeeze out the juice
  3. Transfer the asparagus to the baking dish, add the lemon juice, tossing to coat the spears, and arrange them in a single layer. Add 3/4ths of the sliced mushrooms to the asparagus, then add the minced garlic, and drizzle with olive oil. Season with the lemon zest, pinch of salt, and freshly ground black pepper. Add the raclette cheese on top before layering the remaining mushroom slices on top. 
  4. Roast in the oven for 10-15 minutes, or until the asparagus is tender and the cheese has melted. 
  5. Remove the dish from the oven and serve immediately.
