• Ingredients:
  • 8oz package of whole FunGuy white button mushrooms
  • 2 cups canned chickpeas, drained and rinsed
  • ½ onion, diced
  • 4 garlic cloves, minced
  • ¼ teaspoon coarse salt
  • ¼ teaspoon black pepper
  • ¼ bunch flat leaf parsley, roughly chopped
  • 2 tablespoons olive oil
  • 1 lemon, zested and juiced
  • 1 cup plain yogurt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon dried dill
  • 2 tablespoons chopped fresh parsley
  • salt to taste
  • 4 12-inch tortillas
  • 1 avocado, sliced
  • 1 cucumber, peeled and sliced
  • 2 Italian tomatoes, sliced into wedges

What did the FunGuy say when he was done making lunch? That’s a wrap!

Not just any wrap either! This one is stuffed with roasted chickpeas and mushrooms with slices of creamy avocado, fresh tomato, and crunchy cucumber to make a healthy and filling afternoon meal that’s great at home or on the go.

DIRECTIONS:

  1. Preheat oven to 375F. Line a baking sheet with aluminum foil. 
  2. Brush off any debris from the FunGuy mushrooms with a damp cloth. Pop out the stem using your thumb and discard. Cut the mushrooms into quarter and place them in a bowl along with the chickpeas, onion, garlic, salt, black pepper, parsley, olive oil, and half of the lemon juice and half of the zest. Toss well to coat everything well with the seasoning. Transfer the mushrooms and chickpea mixture to the baking sheet. 
  3. Roast the mushrooms and chickpeas about 15-20 minutes, or until the chickpeas have become crispy on the outside, but still soft inside. Remove them from the oven when finished. 
  4. In a bowl mix the yogurt, black pepper, garlic powder, dill, parsley, and the rest of the lemon zest and juice together. Taste and season with salt as necessary. 
  5. To assemble the wraps layer the sliced cucumber, avocado, and tomato and then add the roasted chickpeas and mushroom into the middle. Spoon the yogurt sauce over everything before folding the ends in and rolling the rest up and over the filling in a tight wrap. Repeat with the rest of the filling and tortillas. 
  6. Serve immediately or refrigerate for later.
