• Ingredients:
  • 8oz package of whole FunGuy white button mushrooms
  • 2 cucumbers
  • 2 cloves of garlic
  • 2 scallions
  • 2 tablespoons cayenne chili flakes (or your favorite dried chili flakes)
  • 1 tablespoon sugar
  • 3 tablespoons soy sauce
  • 3 tablespoons sesame oil
  • 2 tablespoons rice vinegar
  • sesame seeds

Cucumbers are well known to be cool but with the FunGuy around there’s mushroom to be Fun too! 

This cool as a cucumber and mushroom salad has been given a bite of fire with a peppering of spicy chili flakes, rich and nutty sesame oil, and tangy and sweet rice vinegar. It’s a like a zesty, and healthy, party in the mouth! 

DIRECTIONS:

  1. Brush off any debris from the FunGuy mushrooms with a damp cloth and trim the ends of the stems. Slice the mushrooms very thinly and transfer to a mixing bowl. Wash and trim the ends of the cucumbers before slicing into thin rounds; transfer to the bowl with the mushrooms. Peel and mince the garlic, trim the ends of the scallions and slice; add them to the bowl. 
  2. In a small bowl mix the chili flakes, sugar, soy sauce, sesame oil, and rice vinegar. Pour the mixture over the cucumbers and mushrooms, tossing to coat them well. Taste and adjust the seasoning as needed. Cover and allow to marinate at least 15 minutes. 
  3. Serve room temperature or cold with the sesame seeds on top.
