• Ingredients:
  • 2 10oz packages of FunGuy Mushroom Stuffers
  • 2 lemons
  • ½ small white onion
  • 1 tablespoon olive oil
  • ¼ teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 1 lb cooked peeled shrimp
  • ¼ cup plain Greek yogurt or sour cream
  • 2 tablespoons mayonnaise
  • 2 teaspoons chopped fresh dill
  • salt

If the name isn’t enough of a mouthful, this creamy dill flavored shrimp salad that has been stuffed into marinated mushrooms will be sure to finish the job. We highly recommend making extra for the chef because these will be gone in a splash! 

DIRECTIONS:

  1. Brush off any debris from the FunGuy mushrooms with a damp cloth. Pop out the stem using your thumb and discard. Zest the lemons, cut them in half and juice them. Mince the onion as fine as possible. 
  2. Put the mushrooms into a bowl and add half of the lemon juice and half of the zest to the bowl. Add the olive oil, salt, and black pepper to the bowl. Set the mushrooms to the side while they marinate.
  3. On a clean cutting board, cut the shrimp into small chunks and transfer them to another bowl. Add the yogurt, mayonnaise, minced onion, half of the dill, and the rest of the lemon juice and zest to the bowl with the shrimp. Stir well so that the shrimp are all well coated. Taste and season with more salt as needed. 
  4. Remove the mushrooms from the bowl and set them on a plate hole side up. Spoon the shrimp skagen into each mushroom cap and sprinkle the left over dill on top. 
  5. Serve immediately or refrigerate until ready to serve.
