• Ingredients:
  • 8oz package of FunGuy oyster mushrooms
  • 3 tablespoons sesame oil
  • 1 tablespoon oyster sauce
  • 1 tablespoon fish sauce
  • 2 teaspoons grated ginger root
  • ½ teaspoon sesame seeds
  • 2 tomatoes
  • 2 nectarines
  • 2 plums
  • pinch of salt
  • 1 red onion
  • ¼ cup fish sauce
  • ¼ cup rice wine vinegar
  • 2 tablespoons honey
  • 1 teaspoon chili flakes
  • 1 lime, juiced
  • basil leaves

Bring on all the flavors this summer with a beautifully vibrant and fruity FunGuy Oyster mushroom salad!

Sweet nectarines and plums combine with ripe juicy tomatoes and our savory sautéed oyster mushrooms to create the essence of this salad. It’s then dressed with a homemade Thailand inspired vinaigrette.

While this is a perfect light lunch by itself, but if you need something more substantial, we suggest serving this with cold rice noodles and/or grilled chicken, fish, or shrimp!

DIRECTIONS:

  1. Brush off any debris from the FunGuy oyster mushrooms with a damp cloth and place them in a bowl. In a separate bowl, whisk together the sesame oil, oyster sauce, fish sauce, ginger, and sesame seeds. Pour the mixture over the mushrooms and toss to coat. 
  2. Wash the tomatoes, nectarines, and plums well. Remove the stem of the tomato and slice it thinly. Remove the seeds and slice the nectarines and plums into thin wedges. Peel and thinly slice the red onion. Transfer to a large bowl and sprinkle a pinch of salt.. 
  3. In another bowl, whisk together the fish sauce, rice wine, honey chili flakes, and lime juice. Pour over the fruits and toss a couple of times, and set aside. 
  4. Heat a sauté pan over medium high heat. Add the mushrooms and sauté until lightly browned. Turn off the heat and transfer the mushrooms to a plate lined with paper towels to remove any excess oil. 
  5. Assemble the tomatoes, plums, nectarines on a large serving platter. Add the mushrooms to the salad and top with fresh basil leaves and any left over vinaigrette and serve!
