• Ingredients:
  • 8oz package of whole FunGuy white button mushrooms
  • 2 tablespoons olive oil
  • Pinch of salt
  • 2 cloves garlic, minced
  • 1 sprig rosemary, stem removed and minced
  • 4 large slices of bread
  • 2 tablespoons butter, softened
  • 2 tablespoons mayonnaise
  • 8 slices of swiss cheese

It’s that special time of year again where the chilly air turns to warm spring breezes, the birds start their singing and the greatest of sandwiches gets it’s very own special day; National Grilled Cheese Sandwich Day!

For such an occasion, we high recommend a delicious one of our FunGuy approved grilled cheese sandwiches from the archive, or if you’re so excited about this most glorious of days to do a simple search then this simply delicious herbed garlic mushroom grilled cheese is right here at your fingertips.

DIRECTIONS:

  1. With a damp paper towel, gently clean each FunGuy mushroom of any debris and trim the stems. Place the mushrooms into a bowl with the olive oil, garlic, rosemary and salt. Toss with a spoon to coat the mushrooms in everything.
  2. Heat a sauté pan over medium high heat. Once the pan is hot add in the mushrooms and sauté for 5-7 minutes or until the mushrooms are lightly browned and tender. Transfer them to a bowl and cover to keep warm.
  3. Butter one side of the bread with a ½ tablespoon of butter, and while carefully holding the edges, spread ½ a tablespoon of mayonnaise on the other side. Lay the bread on the bottom of the hot pan with the butter side down. Quickly layer the bread with 2 slices of cheese, mushrooms, and 2 more slices of cheese on top. Butter another slice of bread and place it on top of the last layer with the butter side up. Press down on the sandwich gently with a spatula to help the mushrooms “glue” to the bottom bread and cheese.
  4. Allow the sandwich to cook 2-3 minutes before carefully flipping with a spatula and letting it cook another 2-3 minutes or until golden brown on each side. Repeat with the rest of the sandwiches.
  5. Allow the sandwiches to cool about 2-3 minutes before serving!
