• Ingredients:
  • 8oz package of FunGuy oyster mushrooms
  • 1 ½ cups flour
  • 1 tablespoon cajun seasoning
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon coarse salt, divided
  • 2 eggs
  • 1 cup milk
  • vegetable oil for frying
  • ½ cup plain Greek yogurt
  • 2 tablespoons honey
  • 1 tablespoon dijon mustard
  • 1 teaspoon apple cider vinegar
  • salt
  • 1 cup baby leaf Swiss chard, washed and drained
  • 8 slices of bread

Craving a spicy crispy fried chicken sandwich, but without the chicken? No problem! Our oyster mushrooms are the perfect replacement! 

Cajun spices takes these fried oyster mushrooms to a whole new flavor level. Coupled with a sweet tangy yogurt and honey mustard sauce, this sandwich sacrifices nothing all while bringing in mushroom for a crunchy vegetarian version!

DIRECTIONS:

  1. Preheat oven to 200F. Line a baking sheet with parchment paper.
  2. Brush off any debris from the FunGuy oyster mushrooms with a damp cloth and trim the stems. In a wide shallow bowl, whisk the flour, Cajun seasoning, oregano, garlic powder, and half of the coarse salt together. Crack the eggs into another bowl and whisk them together with the milk, and remaining coarse salt.
  3. Pour approximately ½ inch of vegetable oil into a heavy bottom pot or deep pan. Heat the oil over medium-high heat to a temperature of 350F or until a 1 inch cube of bread browns in one minute. While the oil heats up to temperature, prepare the mushrooms for frying.
  4. Dredge the oyster mushrooms in flour mixture, making sure every side is coated. Shake off excess flour and dip the mushrooms into the egg mixture, coating everything, and then transfer back into the flour mix and coat the outside again.
  5. Once the oil is hot, carefully place the mushrooms, 2-3 at a time, into the oil to fry 2-3 minutes per side. Transfer the cooked mushrooms to a clean paper towel lined plate to remove excess oil before transferring them to the oven to stay warm. Repeat with the rest of the mushrooms until all of them have been fried. 
  6. In a small bowl, mix the yogurt, honey, dijon mustard, and vinegar together until smooth. Taste and season with salt as necessary. 
  7. To assemble the sandwiches, spread the sauce on the inside of each slice of bread and layer the Swiss chard on the bottom slice, fried oyster mushrooms, and drizzle with more yogurt honey mustard sauce, and top with the other slice of bread.
