• Ingredients:
  • 8oz package of whole FunGuy white button mushrooms
  • 4-5 garlic cloves
  • 1 cup cherry tomatoes
  • 1/3 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1-2 sprigs fresh oregano
  • 4 ounces cubed feta cheese
  • coarse salt
  • 5-6 fresh basil leaves
  • crusty bread

It’s summer and you need something simple that takes very little prep, and almost no cooking attention, and lucky for you, the FunGuy has just the dish!

Sweet cherry tomatoes, salty feta, and our button mushrooms come together in this toss-it-together and into-the-oven dish that is easily adjusted from delicious and rich Mediterranean appetizer to eat with crusty bread,  to easy main dish when added to a plate full of pasta, chicken, or fish!

DIRECTIONS:

  1. Preheat oven to 400F. Line a baking sheet with parchment paper.
  2. Brush off any debris from the FunGuy mushrooms with a damp cloth. Trim the stems and score the top of the mushroom caps before transferring them to a large mixing bowl. Trim the end of the garlic cloves, peel off the skin, and transfer the cloves whole to the bowl with the mushrooms. Rinse the cherry tomatoes and add them to the bowl as well.
  3. Add the olive oil, vinegar, and the leaves from the oregano sprigs to the bowl with the mushrooms and tomatoes and toss well to mix and coat evenly with the herbs, oil, and balsamic vinegar. Transfer everything to an oven safe baking dish and arrange evenly. Add the cubed feta cheese to the dish.
  4. Transfer the baking dish to the oven to bake about 35-45 minutes, or until the mushrooms have browned on top, the feta has browned around the edges, and the tomatoes have burst.
  5. Remove the mushrooms and tomatoes from the oven and allow to cool at least 5 minutes before serving with crusty bread!
