• Ingredients:
  • 8oz package of sliced FunGuy white button mushrooms
  • 1 tablespoon taco seasoning, divided
  • 1 medium onion
  • 1 small green bell pepper
  • 1 tomato
  • 1 lime
  • ¼ teaspoon salt
  • 1 15 oz can of black beans, drained and rinsed
  • 3 tablespoons olive oil, divided
  • salt
  • 2 -4 heads of baby romaine lettuce
  • shredded cheddar cheese

If you’re looking to add a vegetarian AND low carb option to your Cinco de Mayo celebration this year, look no further!

These FunGuy lettuce boats are filled with healthy black beans, spiced mushrooms, and a delicious fresh salsa. Make sure to double up on those tasty mushrooms, salsa, and beans to accompany a variety of other dishes or even to be used in leftovers for the day after! 

DIRECTIONS:

  1. Lay the sliced FunGuy mushrooms on a cutting board in stacks and cut them in half and add to a bowl and season them with half of the taco seasoning.  
  2. Peel and trim the ends of the onion, remove the stem and seeds from the bell pepper, and remove the stem from the tomato. Dice each into same sized pieces. Place half of the onion and half of the bell pepper into a bowl along with all of the tomato. Cut the lime in half and squeeze the juice into the bowl, season with the salt and stir well to combine. Cover and set aside. 
  3. Heat 2/3 of the olive oil in a saute pan over medium high heat. Add the onion and bell pepper to the pan and saute for 2-3 minutes. Add the black beans and saute 6-8 minutes. Taste and season the beans with salt as needed before transferring them to a bowl, covering to keep them warm while cooking the mushrooms. 
  4. Heat the rest of the olive oil in the saute pan and add the seasoned mushrooms. Cook them about 5 minutes or until browned. Turn off the heat. 
  5. Remove the largest leaves from the heads of lettuce and rinse them thoroughly, pat dry with paper towels, and lay them out to be filled with the beans, mushrooms, and fresh salsa. 
  6. Fill each leaf with the black beans first followed by the mushrooms, tomato and bell pepper salsa, and a sprinkle of cheese on top. 
  7. Serve immediately.
