- Ingredients:
- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 garlic cloves, minced
- 8oz package of sliced FunGuy white button mushrooms
- 3 tablespoons chopped cilantro (optional), divided
- 6 eggs
- ¼ cup milk
- ½ teaspoon coarse salt
- ½ teaspoon cayenne pepper flakes
- 4 6-inch tortillas
- 1 avocado, sliced
- 1 cup shredded cheese
- FunGuy’s Padrón Pico de Gallo
- hot sauce (optional)

Tasty, healthy, and delicious these quesadillas are packed with everything you need for a balanced breakfast: eggs for protein, avocado for healthy fat, cheese because everyone loves cheese, and of course our sliced button mushrooms for the happy “sunshine vitamin” D!
Make sure to serve with our Padrón Pico de Gallo to make it even healthier and get an extra tasty serving of vegetables too!
DIRECTIONS:
- Heat the oil in a pan over medium-low. Once the pan is hot, add the onion and sauté one minute. Add the garlic and sauté another minute. Add the mushrooms and cook 5-7 minutes, or until browned around the edges. Arrange the mushrooms, onions, and garlic into a flat even layer around the pan and sprinkle half of the cilantro around the pan. Reduce the heat to low.
- Crack the eggs into a bowl and add the milk, salt, and cayenne pepper beat with a fork until they are frothy and light yellow in color.
- Pour in the eggs into the pan over the mushroom mixture, allowing the eggs to cook about a minute, or until the bottom of the eggs have started to set before pushing them around the pan to start scrambling them. Allow the eggs to cook all the way through, turn off the heat, and transfer to a bowl and cover while preparing the tortillas for the quesadillas.
- In a clean pan, lay one tortilla in the bottom and cover half of it in shredded cheese. Top the cheese half with ¼ of the mushroom and egg mixture, place ¼ of the avocado slices on top, and finish with some more shredded cheese. Fold the empty side of the tortilla over the mushroom and egg mixture and allow to cook 2-3 minutes on one side, flip and another 1-2 minutes on the other side, or until the tortilla has browned and the cheese has melted. Transfer to a plate and cover to keep warm. Repeat with the rest of the tortillas and mushroom and egg filling.
- Cut the breakfast quesadillas into triangles and serve with cilantro, fresh FunGuy padrón pico de gallo, or hot sauce!
