• Ingredients:
  • 3 tablespoons olive oil, divided
  • 2 salami sausages, cubed
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 8oz package of sliced FunGuy white button mushrooms
  • 1 pound frozen Brussels sprouts
  • ½ teaspoon coarse salt
  • ¼ teaspoon black pepper
  • 2 tablespoons all purpose flour
  • 1 cup milk
  • ½ cup shredded parmesan cheese, divided

Finish off the hearty flavors of winter before easing into spring with a healthy and easy side of Brussels sprouts and FunGuy mushrooms!

Sautéed Brussels sprouts and our sliced button mushrooms come together in a simple creamy parmesan sauce. This side is perfect to pair with roasted chicken, grilled fish, or a juicy steak!

DIRECTIONS:

  1. Heat half of the olive oil in a large sauté pan over medium hi heat. Add the cubed sausage to the pan and sauté about 3-4 minutes, or until some of the fat has rendered out and the edges of the sausage have browned slightly. Next add in the diced onion and garlic and sauté for another minute. Add the sliced FunGuy mushrooms to the pan and continue to sauté another 3-4 minutes.
  2. Once the mushrooms are tender and lightly browned, reduce the heat to medium and add the Brussels sprouts to the pan in a single layer. Drizzle the remaining half of olive oil over the sprouts and season with the salt and black pepper and toss to coat the sprouts and mushrooms with the seasoning. Allow the Brussels sprouts to cook about 5 minutes, or until tender.
  3. Move the sprouts and mushrooms to the side and sprinkle the flour over the remaining oil and fat from the sausage and whisk until a thick paste forms, letting it cook 1-2 minutes, stirring frequently so that it does not burn. Pour the milk into the flour mixture, whisking continuously so no lumps form. Stir half of the Parmesan cheese into the mixture and let it cook 2-3 more minutes, stirring frequently. Once the sauce has thickened, turn off the heat.
  4. Sprinkle the remaining parmesan cheese over the mushrooms and Brussels sprouts and serve!
