- Ingredients:
- 8oz package of FunGuy crimini mushrooms
- ½ head red cabbage
- ¼ head green cabbage
- 1 cucumber
- 3 garlic cloves
- 1 inch ginger root
- 4 tbsp soy sauce
- 1½ tablespoon rice vinegar
- 2 tablespoons sesame oil
- 2 limes
- 1 tablespoon hoisin sauce
- ¼ cup peanut butter
- 1 tablespoon brown sugar
- 4 cups cooked rice vermicelli noodles, cooled
- peanuts (optional)
- cilantro (optional)

Crunchy fresh red and green cabbage are the base of this dish and the mushrooms are on top with a sweet, sour, rich, and tangy peanut lime dressing.
Best part? No need to worry about a hot kitchen while stirring this together so the chef stays cool too!
DIRECTIONS:
- Brush off any debris from the FunGuy crimini mushrooms with a damp cloth and thinly slice before placing in a bowl. Remove the outer leaves from the red and green cabbages and rinse under cool water to remove debris, and shake off any excess water. Thinly slice the cabbages on a cutting board and transfer them to a separate large bowl. Trim the ends of the cucumber, cut it in half and scoop out the seeds and discard them. Cut the cucumber into matchstick thin slices and add it to the bowl with the cabbage.
- Peel and mince the garlic and ginger root and transfer to a small mixing bowl. Add the soy sauce, rice vinegar, and sesame oil to the bowl and mix well. Divide the mixture in half and pour one half over the mushrooms. Cut the limes in half and squeeze the juice of one over the mushrooms before tossing to coat in the seasoning and add them to the cabbage bowl. Toss well and cover. Refrigerate for at least an hour for the mushrooms to marinate.
- To the remaining half of the sauce add the juice from the remaining lime, peanut butter, hoisin sauce, and brown sugar. Whisk until smooth. Cover and refrigerate until ready to use.
- When ready to serve, add a bit of the rice vermicelli to the dish and top with the mushroom and cabbage mixture. Drizzle the peanut lime sauce over the mushrooms and cabbage and top with peanuts and cilantro if desired.
