- Ingredients:
- water
- salt
- 8oz dry linguine
- 8oz package of FunGuy oyster mushrooms
- 2 medium onions
- 2 cloves of garlic
- 3 tablespoons olive oil, divided
- 1 sprig fresh thyme
- salt
- black pepper
Standing over the stove for forty minutes doesn’t usually sound like a good time, but when it involves the FunGuy’s oyster mushrooms and a whole lot of sweet caramelized onions, it’s worth the time and effort!
We’ve stirred up our oyster mushrooms with a slow cooked, deeply flavored sauce made up of caramelized onions, blended until smooth, and tossed in oodles of linguine noodles for all the FunGuys to be twirled in!
DIRECTIONS:
- Bring a pot of lightly salted water to a boil over high heat. Add the linguine to the pot and let it cook 7-9 minutes, or until tender. Drain the pasta of excess water, reserving approximately one ladle full of pasta water for the mushrooms and onion sauce.
- While the pasta cooks, prepare the rest of the ingredients.
- Brush off any debris from the oyster mushrooms with a damp cloth and cut the large oyster mushrooms into slices. Peel the onions and garlic, then thinly slice the onions and mince the garlic.
- Heat 3 tablespoons of the olive oil in a large sauté pan, over medium heat. Add the onions to the pan and cook 2 minutes. Add the garlic and thyme and cook another minute. Turn the heat down to low and cook the sliced onions, stirring every 4-6 minutes, until they have become soft, brown, and very fragrant. This will take about 30-40 minutes.
- Transfer the cooked onions to a blender, or to a bowl and using an immersion blender, and blend until smooth. Set aside.
- In the same pan used for the onions, increase the heat to medium high. Add the remaining olive oil and add the oyster mushrooms to the pan and sauté 6-7 minutes, or until the mushrooms have browned around the edges and become tender.
- Pour the caramelized onion sauce back into the pan, along with the reserved pasta water if needed to thin the sauce, and toss in the linguine into the pan. Stir the linguine into the mushrooms and onion sauce, making sure the sauce coats the pasta. Turn off the heat, season with a pinch of salt and black pepper, taste and adjust the seasoning as necessary. Add the basil leaves.
