• Ingredients:
  • 8oz package of sliced FunGuy white button mushrooms
  • 2 cups shredded cheese
  • 4 bell peppers
  • 1 onion
  • 2 cloves garlic
  • 1 tablespoon olive oil
  • 2 tablespoons tomato paste
  • 1 tablespoon taco seasoning
  • ½ teaspoon coarse salt
  • cilantro
  • Olivia's organic arugula

Taco night doesn’t have to be tortillas, it can be something with mush-room for more fun like these cheesy mushroom filled sweet peppers!

These FunGuy fiesta flavored peppers are stuffed full of shredded cheese, tomato paste, and a handful of our sliced mushrooms in every one. This is sure to get everyone excited, especially the kids, to get in all their veggies and become a new family favorite!

DIRECTIONS:

  1. Preheat oven to 375F. Line a baking sheet with parchment paper.
  2. Place the FunGuy mushrooms into a bowl and set aside. On a cutting board, cut the bell peppers in half from top to bottom, removing the seeds and stem. Lay the peppers in an oven safe dish, cut side up. Dice the onion and mince the garlic.
  3. Heat the olive oil in a sauté pan over medium high heat. Add the onion and cook 1 minute. Add the garlic and cook another minute. Turn off the heat and transfer the onion and garlic to the bowl with the mushrooms. 
  4. Add the tomato paste, taco seasoning, salt, and shredded cheese to the mushrooms and mix well. Spoon the mushroom and cheese mixture into each of the pepper halves, and top with more shredded cheese if desired.
  5. Bake the stuffed peppers in the oven for 20-25 minutes, or until the cheese has melted and the peppers have just started to blister.
  6. Remove the peppers from the oven. Divide the arugula in 4 portions and place 2 haves of the stuffed bell peppers on top and add cilantro leaves if desired.
  7. Serve immediately!
