- Ingredients:
- 8oz package of FunGuy oyster mushrooms
- 2 medium onions
- 4 garlic cloves
- 5 tablespoons olive oil, divided
- 2 tablespoons light vegetable oil
- 3 cups cooked white rice, cooled
- ¾ cup sour cream
- ¼ cup mayonnaise
- 2 tablespoons white wine vinegar
- 1 tablespoon Worcestershire sauce
- salt
- fresh parsley
- black pepper
The task to figure out dinner every night can be overwhelming sometimes, but that’s no reason to tear up! Instead, get in the kitchen and stir up this new creamy caramelized onion and oyster mushroom fried rice.
We know that caramelized onions can lead to tears, between all the chopping and the time it takes to cook it down into it’s sweet golden brown deliciousness, but it’s worth it in this intensely rich recipe. Add in some leftover rice, quickly fried, our golden sautéed oyster mushrooms, and a creamy sour cream sauce, and everyone will be crying for more!
DIRECTIONS:
- Brush off any debris from the oyster mushrooms with a damp cloth and cut the large oyster mushrooms into bite sized pieces. Peel the onions and garlic, then thinly slice the onions and mince the garlic.
- Heat 3 tablespoons of the olive oil in a large sauté pan, or a wok, over medium heat. Add the onions to the pan and cook 2 minutes. Add the garlic and cook another minute. Turn the heat down to low and cook the onions, stirring every 4-6 minutes, until they have become soft, brown, and very fragrant. This will take about 30-40 minutes.
- While the onions are cooking, prepare the rest of the ingredients.
- In a bowl, mix together the sour cream, mayonnaise, white wine vinegar, and Worcestershire sauce. Taste and adjust salt as necessary. Cover and refrigerate until ready to use.
- Once the onions are caramelized, transfer them to a bowl and cover to keep warm.
- In the same pan for the onions, heat the remaining olive oil over medium high heat. Add the oyster mushrooms and sauté 6-7 minutes, or until the mushrooms have crisped and browned around the edges. Transfer the mushrooms to the bowl with the onions and cover.
- Add the vegetable oil to the pan and turn the heat to high. Add the cooked rice to the pan and let it cook, constantly stirring to keep it from sticking, for 5-7 minutes. Add the onions and mushrooms to the rice and continue to cook, stirring frequently, for another 8-10 minutes, or until the rice is lightly crispy. Turn off the heat.
- Pour the reserved sour cream mixture over the rice, oyster mushrooms, and onions. Stir well and add fresh parsley and black pepper as desired.
- Serve immediately.
