- Ingredients:
- 1 cup white rice
- 2 cups water
- 1 tablespoon olive oil
- 8oz package of sliced FunGuy white button mushrooms
- 2 garlic cloves, minced
- 1 shallot, minced
- 1 pound shrimp, deveined and cleaned
- parsley (optional)
Quick and easy are the ideal characteristics of any busy week night dinner, but with the addition of the FunGuy it can be delicious too!
A few shrimp, a handful of mushrooms, and a quick homemade creamy sauce is just what the FunGuy ordered with this recipe. Perfect with a bowl of fluffy rice or noodles to twirl up and chow down!
DIRECTIONS:
- Combine the water and rice in a pot and bring it to a boil over high heat. Reduce the heat to low and cover with a lid. Allow the rice to cook 15 minutes, or until it seems most of the water has evaporated. Remove from heat, leaving the lid on and allow the rice to steam another 10 minutes. Fluff with a fork.
- While the rice cooks, prepare FunGuy mushrooms, shrimp, and sauce.
- Heat the olive oil in a saute pan over medium-high heat. Add the garlic and shallots to the pan and saute them for 2 minutes. Add the mushrooms to the pan and sauté 4-5 minutes. Sprinkle the flour over the mushrooms and whisk so that it soaks up any left over oil in the pan. Pour the milk into the pan, whisking in order to keep lumps from forming. Allow the sauce to simmer with the mushrooms about 3-4 minutes, or until thickened just a little.
- Add the shrimp to the pan and stir. Continue cooking the shrimp until it’s pink and no longer translucent. The shrimp should curl into a ‘C’ shape when done. Turn off the heat.
- Spoon the shrimp and FunGuy mushrooms over the rice and serve immediately with parsley leaves on top.
