• Ingredients:
  • Water
  • Salt
  • 12 oz package of fresh cheese ravioli
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 8oz package of sliced FunGuy white button mushrooms
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons tomato paste
  • ½ cup vegetable broth
  • 1/3 cup heavy cream
  • ¼ cup grated cheese
  • fresh basil leaves (optional)

Has it been a long week and all you want is a quick and simple bowl of warm pasta smothered in an easy but creamy and rich sauce? The FunGuy has the perfect recipe! 

Cheese filled ravioli, plus a flavorful and thick tomato sauce and a couple handfuls of our sautéed sliced white button mushrooms come together in less than half of an hour. Comfort food this easy is perfect for lunch or dinner, weekday or weekend, and any time of year!

DIRECTIONS:

  1. Bring a pot of water with a large pinch of salt to a boil over high heat. Add the ravioli to the pot and let them cook 4-5 minutes. Drain the pasta of excess water and return it to the pot and cover. 
  2. While the ravioli cooks, prepare the FunGuy mushrooms and creamy tomato sauce.
  3. Heat the olive oil in a sauté pan over medium high heat. Add the onion and sauté 1 minute. Next add the garlic and sauté another minute. Add the mushrooms to the pan and continue to sauté 5-6 minutes or until browned around the edges. Season the mushroom mixture with the Italian seasoning, salt, and black pepper. 
  4. With the pan still on the stove, reduce the heat to medium and stir the tomato paste into the mushrooms. Pour the broth into the pan, stirring well to combine. Allow the mixture to come to a simmer and allow it to cook 4-6 minutes, or until the liquid has reduced by at least a third. Stir in the heavy cream until it’s smooth and creamy and allow it to cook another 4-5 minutes. 
  5. Add the cooked ravioli to the pan and toss to coat them in the sauce. Turn off the heat and cover and let stand about 5 minute or until the sauce has thickened around the pasta and mushrooms. 
  6. Serve this creamy tomato sauce, mushrooms, and ravioli with a sprinkle of grated cheese and fresh basil leaves on top!
