Fall is the perfect season to stay in and make a cheesy classic comfort food: lasagna, in the most FunGuy way of course!
Instead of a heavy meaty filling, our sautéed oyster mushrooms are the star of these layers of homemade white sauce, cheese, and sheets of lasagna. Just divide into two, and it’s perfect to share with a fun friend!
DIRECTIONS:
- Preheat oven to 350F. Line a baking sheet with parchment paper.
- Bring a pot of salted water to a boil over high heat. Place the lasagna sheets into the water and allow to cook about 1 minute. Drain off excess water and cut each it in 3 pieces so they can fit in two small oven safe baking dishes like ramekins.
- Brush off any debris from the FunGuy oyster mushrooms with a damp cloth, trim the ends, and cut them into bite sized pieces. Peel the onion and garlic, then finely chop the onion, and mince the garlic.
- Heat the olive oil in a sauté pan over medium high heat. Add in the onion and cook 1 minute. Add the garlic and cook another minute. Add the oyster mushrooms and thyme and sauté about 5 minutes. Transfer the mushrooms to a bowl and cover to keep warm while preparing the sauce.
- Return the pan to the stove top and reduce the heat to medium low. Add the butter to the pan and let it melt. Sprinkle the flour over the melted butter and whisk to combine into paste consistency. Slowly pour the milk, stirring to keep from creating lumps, into the pan. Allow the sauce to cook, stirring frequently, until it’s thickened a bit. Stir half of the parmesan cheese into the sauce and taste, season with salt and black pepper as necessary. Turn off the heat.
- Prepare two individual portion baking dishes by layering the white sauce, lasagna, more sauce, ricotta, oyster mushrooms, mozzarella cheese, a little more sauce, and then top with another piece of lasagna. Finish with one more layer of lasagna and top with mozzarella, some more of the oyster mushrooms and a sprinkle of parmesan cheese. Repeat the process with the other dish and remaining ingredients. There should be 3 layers of oyster filled lasagna and in each dish.
- Place in the oven and allow to bake 10 to 15 minutes or until the cheese has melted and browned on top and the lasagna is hot throughout. Allow to cool at least 5 minutes before serving!
