- Ingredients:
- 10oz package of FunGuy Mushroom Stuffers
- 2 tablespoons olive oil, divided
- 1 shallot, minced
- 2 cups finely chopped spinach leaves OR 1 cup frozen spinach
- 2 eggs
- ¼ cup shredded cheese
- salt
- black pepper
- 2-3 slices of thick cut smoked ham
What do Sam I am and the FunGuy have in common? They both love a good green eggs and ham!
The difference though? These are green eggs made with finely chopped spinach, a thick crispy piece of smoked ham, and then stuffed both into our mushroom stuffers! Fun for kids and nostalgic and delicious for adults!
DIRECTIONS:
- Preheat oven to 375F. Line a baking sheet with parchment paper.
- Brush off any debris from the FunGuy mushrooms with a damp cloth. Pop out the stem using your thumb and discard. Drizzle half of the olive oil over the mushrooms, rolling them in the oil to coat the outside very lightly, and lay the caps hole side up on the prepared baking tray.
- Heat the remaining oil in a sauté pan over medium heat. Add the shallot and cook 2 minutes. Add the spinach to the pan and cook another 3-6 minutes, or until the spinach as wilted and most of the water has evaporated.
- In a bowl, whisk together the eggs, shredded cheese, and a pinch of salt and black pepper until well combined.
- Reduce the heat under the pan to medium low and pour the eggs in. Allow the eggs to cook, stirring slowly to pull them from the bottom of the pan so they don’t burn, but become a vibrant green color from the spinach. Turn off the heat once the eggs are almost cooked through but still wet.
- Spoon the egg mixture into each of the mushroom caps and transfer the filled mushrooms to the oven and allow them to bake about 10 minutes or until the cheese has melted and the eggs have finished cooking and are no longer wet.
- While the mushroom cook in the oven, prepare the smoked ham.
- Using a clean pan over medium high heat, lay the ham slices in a single layer in the pan and allow them sear and crisp around the edges, turning several time to make sure nothing burns, for about 5-6 minutes. Turn off the heat and cut the ham into bite sized pieces.
- When the mushrooms are done cooking, remove them from the oven and place a bit of ham on top of each and allow the mushrooms to cool about 5 minutes before serving.
