• Ingredients:
  • 8oz package of sliced FunGuy white button mushrooms
  • 2 mini cucumbers
  • 1 medium cucumber
  • 3-4 cloves garlic
  • 2 Italian tomatoes
  • 2 lemons
  • 4 tablespoons olive oil divided
  • ¼ teaspoon coarse salt
  • 1 ½ cup plain Greek yogurt
  • crumbled feta cheese
  • salt
  • black pepper
  • 1 long baguette

It’s time you feta get in the kitchen for this week’s grilled Greek garlic toasts! 

These aren’t just any toasts, but ones that use summer’s abundant supply of cool cucumber in two ways; a simple lemon and olive oil marinade for thinly sliced mini cucumbers and FunGuy mushrooms as well as in a creamy refreshing tzatziki sauce. 

To serve just spread a bit of the sauce over grilled garlic bread and layer them up with tomato slices, mushrooms and cucumber, and top with a hint of salty feta.

DIRECTIONS:

  1. Put the FunGuy mushrooms into a large bowl. Wash and slice the mini cucumbers and add them to the bowl. Cut the medium sized cucumber in half lengthwise and scrape out the seeds with a spoon. Peel and mince 2 cloves of the garlic, crush the other two with the flat side of the knife, and thinly slice the tomatoes. Cut the lemons in half and squeeze the juice into a bowl, making certain to remove the seeds. 
  2. Pour half of the lemon juice, half of the olive oil, and the ¼ teaspoon salt into the bowl with the mushrooms and cucumber. Toss well and set aside to marinate for at least 15 minutes.
  3. Grate the cucumber into small bits and transfer to a bowl. Mix the yogurt and the rest of the lemon juice in with the cucumber. Taste and season with salt and black pepper as desired. Cover and refrigerate until ready to use. 
  4. Cut the baguette in half lengthwise, drizzle the inside with the remaining olive oil, and rub the crushed garlic over the surface. 
  5. Heat a grill pan over medium high heat. Once it’s hot lay each bread slice on the grill, cut side down. Allow to it to toast 3-5 minutes or until grill marks form and it starts to brown. Transfer to a clean cutting board before cutting into 2-3 inch wide pieces. 
  6. Assemble the toasts as soon as they are done grilling. Spread the yogurt and cucumber tzatziki sauce over the bread, a slice of tomato, some marinated cucumber and mushrooms, and top with a crumble of feta cheese. Serve immediately.
