• Ingredients:
  • 15oz can of chickpeas
  • 8oz package of sliced FunGuy white button mushrooms
  • 1 cup cherry tomatoes, halved
  • ¼ cup fresh basil leaves, chopped
  • 1 lemon, zested and juiced
  • ¼ cup olive oil
  • salt
  • fresh cracked black pepper
  • 2 ounces crumbled goat cheese

Easy, quick, and seasonally inspired this marinated chickpea salad is just what the FunGuy called for this summer!

Lemon and basil are the main flavors in this hearty, yet cool marinated salad consisting of chickpeas, our sliced white button mushrooms, sweet cherry tomatoes, and creamy crumbled goat cheese. As it takes only about ten minutes of active time, and only gets better as it marinates, we suggest to make this salad ahead of any summer potluck from Independence Day to Labor Day and every party in between! 

DIRECTIONS:

  1. Rinse and drain the chickpeas and add them to a large mixing bowl. Cut the cherry tomatoes in half and roughly chop the basil leaves, grate the lemon peel to remove the zest before cutting the lemon and half to juice. 
  2. Add the sliced FunGuy mushrooms, cherry tomatoes, and basil leaves to the mixing bowl with the chickpeas. Add the lemon zest and juice to the bowl along with the olive oil and stir well. Season with salt and black pepper to taste. Stir again and cover. Refrigerate for at least 40 minutes to allow the salad to marinate, and up to the night before prepping the rest of the salad to serve.
  3. When ready to serve, taste and readjust salt and fresh black pepper if needed.
  4. Serve with crumbled goat cheese on top!
