• Ingredients:
  • 8oz package of oyster mushrooms
  • 4 6-ounce salmon steaks
  • coarse salt
  • fresh ground black pepper 
  • 2 tablespoons olive oil
  • ¼ cup white wine
  • 1 large lemon
  • 4 tablespoons butter
  • fresh parsley/dill/chives

But the real star of this dish isn’t a good piece of seared fish. Instead it’s the rich lemon butter sauce full of our sautéed oyster mushrooms that makes this dish go from just “tasty” to having everyone sea-riously hooked!

DIRECTIONS:

  1. Brush off any debris from the FunGuy mushrooms with a damp cloth. Pop out the stem using your thumb and discard.
  2.  Lay the salmon fillets on a clean cutting board and pat each side dry with paper towels and season with the salt and pepper on both sides.
  3. Heat the olive oil in a large pan or skillet over medium high heat. Lay the salmon fillets in the pan, in a single layer to sear the flesh 2-3 minutes before turning it over and allowing the skin to sear on the other side 2-3 minutes. Repeat the process until the salmon is cooked through and a thermometer reads about 125F.  Transfer to a plate and cover to keep warm.
  4. Return the pan to the burner over medium high heat and add the mushroom to the pan to cook 6-7 minutes, stirring frequently, or until browned around the edges. Pour the wine and lemon juice into the pan with the mushrooms and gently scrape any brown bits from the bottom. Continue cooking and stirring frequently until the liquid has reduced to a couple tablespoons; approximately 2-3 minutes. Reduce the heat to low and add the butter, stirring until it has melted. Taste the sauce and adjust the salt and black pepper as necessary and turn off the heat.
  5. Pour the lemon and mushrooms sauce over the salmon and serve!
