- Ingredients:
- 1 package of FunGuy shiitake mushrooms
- 3 heads bok choy
- 4-6 spring onions
- 5-6 garlic cloves
- 1 pound dried chow mein noodles
- water
- 3 tablespoons hoisin sauce
- 1 teaspoon five spice powder
- 1 teaspoon coarse salt
- 5 tablespoons vegetable oil, divided
- 2/3 cup vegetable broth
- ½ cup oyster sauce
- 3 tablespoons rice vinegar
- 2 tablespoons soy sauce
- 1 tablespoon sugar
- ½ teaspoon ground white pepper
Craving a good noodle dish to chow down on and take out isn’t an option? Then gather up some of our shiitake mushrooms and get into the kitchen to stir up a plateful of this FunGuy chow mein and bok choy!
Sticky hoisin shiitake mushrooms, quick fried chow mein noodles, and a healthy dose of vibrant green bok choy comes together with a sweet and savory homemade sauce in this week’s recipe. The best part? It’s done in 30 minutes!
DIRECTIONS:
- Brush off any debris from the FunGuy shiitake mushrooms with a damp cloth, trim the stems, slice the caps, and transfer to a bowl. Rinse the bok choy under cool water and remove any damaged leaves. Separate the large leaves from the small bunch in the middle, trim the ends of the cabbage and slice the large leaves into 1-inch thick strips and cut the small bunches in half or quarters and set aside. Trim the roots from the onions and slice, setting aside. Peel and mince the garlic cloves.
- Bring a large pot of water to a boil on the stove top over high heat. Add the noodles and cook 4-5 minutes, or until the noodles are just tender. Drain in a colander and set aside while preparing the mushrooms and bok choy.
- In a bowl mix together the hoisin sauce, five spice powder, coarse salt, and 2 tablespoons of the oil and pour it over the mushrooms, tossing to coat the mushrooms in the sauce.
- In another bowl mix the vegetable broth, oyster sauce, rice vinegar, soy sauce, sugar, and white pepper until combined. Set aside.
- Heat another 2 tablespoons of the oil in a large wok or nonstick pan over medium high heat. Add the noodles and cook, stirring occasionally, for about 1-2 minutes. Make sure the noodles are coated in the oil evenly. If the noodles look too dry, add water a tablespoon at a time to re wet and loosen the noodles from the pan.
- Move the noodles to the side and add the remaining oil. Add in the onion and garlic, stirring into the hot oil for about 30 seconds before pulling the noodles back into the middle of the pan and stirring everything together.
- Transfer the noodles to a large bowl, leaving as much of the sauce in the pan as possible, and cover them. Add the mushrooms to the pan, cooking them 2-3 minutes before returning the noodles to the pan and mixing them together. Add the bok choy and sauce to the pan and toss to mix well. Reduce the heat to medium low, cover, and allow the bok choy to steam in the sauce and noodles about 2-4 minutes, or until the bok choy is tender but still vibrant green and the shiitake mushrooms are tender. Turn off the heat.
- Serve immediately.
