- Ingredients:
- 4 (4 oz) salmon fillets
- 3 garlic cloves, minced and divided
- 4 tablespoons honey, divided
- 3 tablespoons soy sauce, divided
- ½ teaspoon red pepper flakes
- 3 limes, juiced and divided
- ½ tablespoon peanut oil
- 8oz package of sliced FunGuy white button mushrooms
- 1/3 cup peanut butter
- 1 tablespoon sesame oil
- 6 cups mixed greens
- 2 cucumbers, peeled and sliced
- 1 small red onion, sliced
- chopped peanuts
This week’s recipe is a deliciously sofish-ticated and flavorful salad that will satisfy all taste buds: sweet, salty, sour, umami, and bit of subtle heat!
Seared salmon and our sautéed mushrooms are the perfect sticky sweet addition to a bowl of fresh salad greens, crunchy cucumber, and topped with a tangy creamy, crunchy peanut butter dressing to pull it all together.
This recipe is guaranteed to have the whole family hooked after just one bite!
DIRECTIONS:
- Lay the salmon on a cutting board and remove any stray bones and skin before transferring to a dish.
- Add half of the garlic cloves to a bowl along with half of the honey, half of the soy sauce, the red pepper flakes, half of the lime juice, and whisk to mix well. Taste and adjust soy sauce and honey to taste. Set aside.
- Add the peanut oil to a pan and heat over medium high heat. Lay the salmon fillets into the pan and cook 4-6 minutes, turning each minute, until it has a lightly browned crust and is cooked through. While the salmon cooks, add the mushrooms to the pan and sauté in any remaining peanut oil in the pan until browned.
- Pour the honey glaze mixture into the pan and stir it into the mushrooms and turn the salmon in it to coat the fish. Reduce the heat to medium low, stirring frequently to prevent sticking or burning, and allow the glaze to thicken; approximately 3-4 minutes. Add a little water to thin the glaze if needed. Cover and turn off the heat.
- Transfer the remaining garlic, honey, soy, and lime juice to a bowl along with the sesame oil and peanut butter and mix well. Taste and adjust seasoning as necessary and the amount of peanut butter for thicker or thinner consistency.
- Divide the mixed greens, cucumber slices, and red onion among 4 dishes. Top each salad with salmon and mushrooms. Dress the salads with the honey peanut butter and lime dressing and add peanuts on top.
- Serve immediately!
