• Ingredients:
  • water
  • 4 eggs
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 8oz package of sliced FunGuy white button mushrooms
  • 1 tomato, diced
  • 1 medium bell pepper, diced
  • 1 tablespoon tomato paste
  • 2 cups cooked rice
  • 4 corn tortillas
  • 2 green onions, chopped
  • fresh cilantro (optional)
  • Hot sauce (optional)

Do you always make enough rice to feed an army when you steam up a pot? Now there’s a ton of that plain rice leftover and don’t have a clue what to do with all the extra? Look no further than the FunGuy for inspiration! 

This easy tomato rice with our sautéed sliced mushrooms comes together in less than half an hour and even includes a soft boiled egg with the perfect runny yolk, making it ideal for morning, noon or night!

DIRECTIONS:

  1. Bring a small pot of water to a boil over high heat. When the water starts to boil carefully drop in the eggs, cover and allow them to cook 5-5 ½ minutes for soft yolk. Turn off the heat and transfer the eggs directly into a bowl of ice water to stop the cooking. If you prefer hard-boiled eggs, allow them to cook about 12 minutes, turn off the heat and allow them to stand in the hot water for 5 minutes before cooling and peeling.
  2. Heat the olive oil in a large sauté pan over medium heat. Add the garlic and sauté 1 minute. Add the FunGuy mushrooms to the pan and sauté 5-6 minutes, or until browned around the edges. Next add the diced tomato and the tomato paste to the pan and cook, stirring frequently, 2-3 minutes. Add the leftover rice and the diced bell pepper to the mushrooms and tomato, stirring well to combine. Continue to cook 5-6 minutes or until the rice is warmed through. Taste and season with salt as necessary and divide the rice between 4 dishes. 
  3. Reduce the heat to low and add the tortillas 1 or 2 at a time to the sauté pan and let them heat through on both sides. When the tortillas are ready, divide them among the dishes. 
  4. Carefully peel, rinse and cut open the soft-boiled eggs and add two halves to each dish and top with chopped green onions, cilantro, and hot sauce. Serve immediately!
