• Ingredients:
  • 1 tablespoons olive oil
  • 1 small onion, diced
  • 8oz package of sliced FunGuy white button mushrooms
  • 1/2 teaspoons paprika
  • ¼ teaspoon cumin
  • ¼ teaspoon salt
  • 1 cup shredded turkey
  • 1/3 cup shredded cheese, plus some for topping
  • 8 6 inch flour tortillas
  • 3 tablespoons light vegetable oil
  • 1 cup shredded lettuce
  • 8 tablespoons salsa
  • 4 tablespoons sour cream

Thanksgiving is a wonderful time of year to spend with family and friends, but it always comes with an over abundance of food, especially turkey! 

This year the FunGuy has decided to give a tasty alternative to the usual sandwiches and soups with these crunchy, cheesy, turkey and mushroom filled flautas. These flautas are much like the equally delicious taquito, but they are bigger and use flour tortillas instead of the corn variety. 

So have a bit a fun in the kitchen this holiday weekend with something less tried and true and make something new!

DIRECTIONS:

  1. Heat the olive oil in a saute pan over medium-high heat. Add the onion to the pan and saute for 2 minutes. Add the FunGuy mushrooms to the pan and season with the paprika, cumin, and salt then allow it to cook for 4-5 minutes, stirring occasionally. Add the shredded turkey to the pan and stir it all together. Allow it to cook another 2 minutes, or just barely warmed through. Turn off the heat and transfer the filling to a bowl. 
  2. Lay the tortillas out on a flat surface and spoon the turkey and mushroom mixture into the middle of each tortilla in a line. Sprinkle cheese on top of the mushroom mixture before rolling the tortilla up and around the filling, leaving the ends open. Repeat with all of the tortillas and filling. 
  3. In a clean pan, heat the vegetable oil over high heat. Once the oil is hot, turn it down to medium-high and add the rolled tortillas to the pan, edge side down, in a single layer. Allow them to cook about 3 minutes before turning them over and cooking the other sides about 1-2 minutes on each side. Transfer the cooked flautas to a plate lined with paper towels until ready to plate. 
  4. To serve, place two flautas on a plate and top each with salsa, sour cream, lettuce, and extra shredded cheese.
