• Ingredients:
  • 10oz packages of FunGuy Mushroom Stuffers
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 teaspoon coarse salt
  • ½ pound sausage
  • ½ teaspoon dried oregano
  • ½ teaspoon paprika
  • ½ teaspoon cayenne pepper flakes (optional)
  • 4 black olives, pits removed and cut in half
  • 1 small sweet red pepper, diced

Planning a monster of a Halloween party and need a plateful of savory treats to trick your guests with? Look no further than these watchful spooky FunGuy stuffer eyes!

Our FunGuy stuffers filled with savory sausage, blood red tomato, and ogling olives make for a deliciously devious bite for all the ghouls and goblins, big and small!

DIRECTIONS:

  1. Preheat oven to 375F. Line a baking sheet with parchment paper.
  2. Brush off any debris from the FunGuy mushrooms with a damp cloth. Pop out the stem using your thumb and/or a small teaspoon to remove any leftover bits and place each mushroom cap on a parchment lined baking sheet. Roughly chop the mushroom stems on a cutting board and set aside.
  3. Heat olive oil in a sauté pan over medium high heat. Add the onion and garlic and sauté for 1 minute. Next, toss in the mushroom stems and sauté another 2 minutes. Season the mushroom mixture with salt, oregano, paprika, and cayenne pepper flakes and mix well to combine.
  4. Transfer the seasoned mushroom filling mixture to a bowl and add in the sausage meat. Mix the filling well before spooning it into each mushroom cap. Top each stuffed mushroom with half a black olive and stuff each with a piece of red pepper into the center of the olive hole.
  5. Place the baking tray into the oven and allow the mushrooms to bake for 20-25 minutes, or until the sausage is cooked through and the mushrooms have released much of their juices. 
  6. Remove the mushrooms from the oven and allow them to cool at least 5 minutes before serving.
